A young blue cheese with just 2 months of maturation, made with raw sheep's milk. A paste with a firm texture but which, in turn, melts in the mouth. Slightly pleasant, elegant itchiness. Obvious earthy and damp notes, but very well balanced. The organic salt, from the Bahía de Cádiz Natural Park, gives it the present salty touch.
