PRODUCT CHARACTERISTICS

• Maturation: Matured between 2 and 4 months in optimal environmental conditions.

• Crust: Half-length, defined and differentiated from the paste. Mold (penicilium candidum) is present. Ocher color.

• Paste: Whitish, soft and of uniform structure, being able to present rounded eyes typical of the ripening distributed in the cut. Fatty character and no graininess.

• Texture: Compact, tender, buttery, melting in the mouth.

• Odor: Medium or low intensity of the lactic and / or vegetable family.

• Taste: Low salty, may have moderate acidity. Lactic and creamy taste on the palate.
