PRODUCT CHARACTERISTICS

Maturation: minimum 60 days.

Bark: medium hard, defined and differentiated from the paste, with a uniform color of ocher tones without the addition of colorants. It may have small cracks on its surface.

Paste: soft to very soft consistency, white to yellowish in color, with rounded eyes typical of maturation, distributed throughout the cut.

Texture: fundamental and differential quality of this cheese, it presents moderate or high creaminess, greasy character, flux and smooth or no granularity.

Odor: from the lactic and / or vegetable family.

Flavor: intense and developed. It is melting on the palate, slightly salty and slightly bitter, a characteristic that is due to the use of vegetable rennet.

Tasting: It should be done with the tempered cheese, around 21ºC. To enjoy opening with a knife at the top, as if removing a lid.

This has been determined by a jury of gastronomic experts at the 32nd edition of the World Cheese Awards, held in Bergamo (Italy). Our Torta del Casar DOP Virgen Del Prado, has been a finalist among the 16 best cheeses in the world.

3,804 cheeses from 42 countries on five continents have participated in the contest. The jury of this contest awards the gold, silver and bronze classifications. After the evaluations of the jury, in a final round a total of 16 cheeses with the Super Gold are distinguished and it is these that go to the grand final.

The World Cheese Awards is the most important international cheese competition on the planet. The 250 experts who have valued each sample presented opted to give the third highest award to our Torta del Casar D.O.P.
