Dispersible in cold and completely soluble above 70 ° C.
Insoluble in vegetable oils, mineral and organic solvents.
Pour the powder (premixed with other dry ingredients) on the water, while stirring vigorously until completely dispersed. Heat until complete dissolution (70 - 80 ° C). Do not pour the liquid over the powder. It forms a translucent, soft and elastic gel; termoreversible, ability to reconstitute once broken.
The gelation occurs when the solution is cooled (36 - 38 º C). Under acidic conditions degradation of the gel strength increases with temperature and heating time. It is stable in neutral or alkaline medium.
Use 2g / l for soft gel, 10-15g / l for hard gel.
