TANDOORI MASALA: With its reddish color, this iconic Indian blend has a slightly smoky and salty flavor, hot yet fresh, less spicy than madras curry. Its preparation is made from coriander powder, ginger, cardamom, garlic, oregano, fenugreek, cumin, cinnamon, pepper, pepper, nutmeg, cloves, maize, bay leaf, mustard and salt.

MADRÁS CURRY: This spice blend comes from Chennai (Madras). It has a spicy, hot and perfumed flavor. It consists of coriander, turmeric, mustard seeds, fenugreek, pepper, cumin, flour, bell pepper, garlic, fennel, and salt. Due to its flavor, it is a very versatile mixture that enhances meats, vegetables, rice and sauces.

GARAM MASALA: Garam Masala is an aromatic blend of ground spices used in Indian cuisine. The mixture consists of: fenugreek, cinnamon, fennel, black pepper, green cardamom, coriander. It is not a very spicy mixture, it is used for its deep and warm flavor. It is found in many curry, meat or vegetable recipes.

GINGER POWDER: This Nepalese Ginger is hand-harvested. It is surprising for its freshness and its more or less spicy nuances, its sweet and lemon flavor. Ideal in purées, seafood, vegetables, salads and jams.

TURMERIC: This spice originating in Madagascar is one of the most used in kitchens around the world, as it is one of the ingredients used for spice mixtures such as curry, tandoori, or raz-el hanout.

GALANGAL ROOT: Galanga is a spice from India; slightly spicy, it gives off flavors of camphor, cinnamon and citrus. It is widely used in Thai cooking to perfume a vegetable soup or enhance a curry paste. Reduced to powder, the galangal awakens a "émincé" de ave (thin strips), a shrimp soup with coconut milk, a vegetable broth and even prawn skewers.

NAGA CHILE: This chili is one of the hottest in the world and has a characteristic fruity and powerful flavor. It is used whole in sauces or marinades. Enhances the flavor of white fish in sauce, chili con carne, pizzas and flavored oils, marinated meats, homemade risottos and gazpachos.

LEMON GRASS: Lemon grass is harvested in Nepal, it has a citrus flavor very close to lemon that aromatizes soups, creams, meats and even desserts.
